A fermented mixture of koji (rice inoculated with the special and safe mold Aspergillus, which provides the conceptual framework for Soy Sauce, Sake, Miso), shio (sea salt) and water – as a seasoning in place of salt for its powers of Umami.
The enzymes in koji transform starches into simple sugars, split proteins into amino acids and break down fats. These are the systems that multiply Umami.

Miyazaki Wagyu is 100% purebred wagyu, never cross bred with any other breeds.
Miyazaki Wagyu is recognized for its cherry red colour, tender texture and great dense meat taste. The snowflake-liked fat is evenly distributed and produces a non-greasy flavour. It begins to dissolve at the the temperature of 25 degrees Celsius, melting right in the mouth.
The National Wagyu Award has now gone to Miyazaki Wagyu two consecutive times meaning it has held the reigns for ten years!

They are natural cattle raised in Oregon under the strict of standards using proprietary feeding programs from Japan that enhance the marbling and the flavor of the meat.No hormones or growth promotants and no added antibiotics in their feed.
Japanese experts control the unique, safe and healthy feeding programs. As a result Washu have softer fat which not only enhance the flavor of meat but also contains but also contains rich Oleic acid.
